Salt Tradition Revived on Ile d’Oleron

Local authorities on France’s Ile d’Oleron are launching an initiative to restore 20 abandoned salt ponds to revive the production of fleur de sel. While the island once boasted 85,000 ponds, only 13 remain active today.

The project aims to boost local production, strengthen tourism, and preserve the island’s unique cultural heritage. With an average annual income for salt farmers around €24,000, the revival is also seen as a way to support sustainable local employment.
